"Parton" Me

The other night I was watching "Oprah - After the show". It's a series that's on the Oxygen channel and is a 30 minute bit that shows what happens when the regular show ends. Oprah had Dolly Parton on and she made a comment about how tiny & petite Dolly is. Dolly's response killed me.

"I have little feet and a little waist because nothing grows in the shade..."

Gotta love that.

I was thinking of doing a little healthy recipe series for the month of January. The only thing is, it's actually very time consuming finding things that I think everyone will like and maybe even try. This is what I found so far. We'll see if it lasts :)

This first one is NOT good for you, but I just had to post it due to the yuck factor. Not a single thing about this sounds good. Even the name isn't appealing.

Haggis

1 sheep stomach
1 sheep liver
1 sheep heart
1 sheep tongue
1/2 pound suet, minced
3 medium onions, minced
1/2 pound dry oats, toasted
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 teaspoon dried ground herbs

Rinse the stomach thoroughly and soak overnight in cold salted water.

Rinse the liver, heart, and tongue. In a large pot of boiling, salted water, cook these parts over medium heat for 2 hours. Remove and mince. Remove any gristle or skin and discard.

In a large bowl, combine the minced liver, heart, tongue, suet, onions, and toasted oats. Season with salt, pepper, and dried herbs. Moisten with some of the cooking water so the mixture binds. Remove the stomach from the cold salted water and fill 2/3 with the mixture. Sew or tie the stomach closed. Use a turning fork to pierce the stomach several times. This will prevent the haggis from bursting.

Me says: Bursting??

In a large pot of boiling water, gently place the filled stomach, being careful not to splash. Cook over high heat for 3 hours.

Serve with mashed potatoes, if you serve it at all.

Now for the good stuff. Those of you who are scared of tofu - this is for you to try. Get over your fear! It's good and good for you!!

Silken Smoothie

1 cup raspberries, frozen
1 cup crushed pineapple
1 cup soymilk
2 tablespoons honey
1 lemon, juiced
1 teaspoon vanilla extract
1/2 cup soft silken tofu - silken refers to the texture of the tofu

Combine all ingredients in a blender and puree until smooth.

Drink and enjoy! Yumm!
