What Can I Say... Yesterday afternoon I started getting a funny feeling about the election...not a good feeling. I'm glad I wasn't feeling hopeful because that would have today worse. I heard something on the radio this morning that had nothing to do with the election: They have eyes, but they cannot see. They have ears, but they cannot hear. This must be what is going on in this country. -- Greg and I are going out for Thanksgiving....alone. My family is splitting up this year and we are all doing our own thing. On one hand I feel good about that. In past years dinner/gatherings with my family have been....stressful....no joke. So avoiding that crap will be nice. On the other hand, I'm a very traditional person, so knowing we won't be sitting around my Mom's table at Thanksgiving leaves me feeling a little sad. I don't have a hard time remembering the days when everyone got along and family dinners were something we looked forward to. I would like it to be that way again. I would like to have that family bond that used to exist. But sadly, I don't think holidays will ever be the same for my family. I think I better get used to going out for Thanksgiving dinner. -- And speaking of Thanksgiving....and ending on a sweet note, here is a recipe to tempt you. You will be amazed at how much it tastes like pumpkin pie! It's much lighter in color, but just as delicious. Give it a try. Squash Pie 1 small butternut squash, about 2 pounds 2 eggs 2 cups milk 1/2 cup molasses Dash salt 2 tablespoons cinnamon 1 tablespoon ginger Frozen pie crust Cut up the squash, remove seeds, and cut off the outside rind. Simmer in a covered saucepan in a small amount of water until tender. Drain water and discard. Force squash through a sieve, food mill or just puree small amounts at a time in a blender. Measure 2 cups of squash puree. Preheat oven to 400 degrees F. Beat eggs and add milk. When blended, add squash puree, molasses, salt, cinnamon, ginger and stir well. Pour into pie shell. Bake for 15 minutes, then turn down the oven to 375 degrees F. for 30 minutes or until set. Cool before serving. posted by Kitty Wednesday, November 03, 2004
