Recipe

Simple Manicotti

Serve with french bread and salad!

1 pint part-skim ricotta cheese
8 ounces shredded mozzarella cheese
3 links of mild italian sausage
3/4 cup grated Parmesan cheese
2 eggs
1 teaspoon dried parsley
salt and pepper to taste
1 (16 ounce) jar good pasta sauce
5 1/2 ounces manicotti pasta

Preheat oven to 350 degrees.

1. Brown sausage (remove outer casings) in a skillet. Let cool.

2. Cook manicotti in salted boiling water 3 minutes short of package directions so they are slightly under cooked. Drain, and rinse with cold water (they will finish to cooking in the oven).

3. In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, sausage, parsley, and salt and pepper. Mix well and put in a ziploc bag and cut one corner off making a piping bag. Fill each manicotti shell with approx 3 tablespoons cheese mixture.

4. Pour 1/2 cup sauce into an 11x17 inch baking dish. Arrange manicotti over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.

4. Bake 45 minutes, or until bubbly.
