RecipeSimple ManicottiServe with french bread and salad!1 pint part-skim ricotta cheese8 ounces shredded mozzarella cheese3 links of mild italian sausage3/4 cup grated Parmesan cheese2 eggs1 teaspoon dried parsleysalt and pepper to taste1 (16 ounce) jar good pasta sauce5 1/2 ounces manicotti pastaPreheat oven to 350 degrees.1. Brown sausage (remove outer casings) in a skillet. Let cool.2. Cook manicotti in salted boiling water 3 minutes short of package directions so they are slightly under cooked. Drain, and rinse with cold water (they will finish to cooking in the oven).3. In a large bowl, combine ricotta, mozzarella, and 1/2 cup Parmesan, eggs, sausage, parsley, and salt and pepper. Mix well and put in a ziploc bag and cut one corner off making a piping bag. Fill each manicotti shell with approx 3 tablespoons cheese mixture.4. Pour 1/2 cup sauce into an 11x17 inch baking dish. Arrange manicotti over sauce . Pour remaining sauce over top, and sprinkle with remaining Parmesan cheese.4. Bake 45 minutes, or until bubbly. posted by Kitty Friday, January 06, 2006
